Nick,

Setting up LCDproc is not very hard.  It only takes a few command  
line entries.  Once it is installed, you don't really have to do much  
to it.  I can walk you through it off the list if you want.

Once you do that, you can install Growl to get notifications from  
other programs like Mail and iTunes and RSS.  It is all GUI based and  
uses your system preferences.

Then, you can install my Growl Display:

to forward the Growl notifications to LCDproc.

LCDproc probably supports the most displays that I have seen, and  
Growl supports notifications from the most Mac programs, so you have  
a lot of options when you use my Growl Display.  This seems to do  
just what you need, and I don't know any other Mac solution that  
would come close.
