I2C is supported by the Linux kernel.
It should be standard in 2.4 (that's what we hope).
There is a bunch of programer working on LM-SENSOR that
also support the I2C support into the kernel.
Option for having I2C in your PC are (check driver availability first):
Parallel adapter (easy to use but might consume CPU time)
Serial adapter (cost a lot more money and energy to build)
Use a TV tuner card (WinTV)
Use a new video card with composite output (Voodo 3D?)
Don't try the SMB bus as it won't work with Matrix Orbital LCD.
SMB is not a real I2C bus.
I have been using Matrix Orbital driver to talk over I2C to my LCD.
It give EXACTLY the same result as with serial.
The only tricky thing is that if you don't have a keypad support on the LCD,
but you try to read a caracter from the LCD, something really goes bad
(screen does not respond or I2C bus is block, who knows)
There as been a patched version MtxOrb for I2C send by someone on this list.
The only trick was to open another file than the serial device.
